The main reference point is the Battle of Yavin, marked as a sort of "year zero" because it was a major Rebel victory that marked a turning point in the Civil War (and, in terms that are less in-universe geeky, was the climactic event in the very first Star Wars film). The vast, expansive history of the Star Wars universe is so sprawling that there are actually defined calendar dates that are considered official canon. As suddenly as the Empire came into power, Saw Gerrera's Rebel cell seems to have sprouted up just as quickly, already planting the seeds for the Civil War to come.

The Clone Wars and the Galactic Civil War are the two major conflicts that define the bulk of the Star Warsmythology, but the new animated series The Bad Batchredefines this timeline and suggests that the division between these two broad eras started earlier than previously thought.
